Cuba’s food culture is the direct result of several factors intermixing: the history of the different people who settled there, its island location, and its tropical climate. Cuban cuisine is a blend of Spanish, African, and other Caribbean cuisines. Some Cuban recipes share spices and techniques with Spanish and African cooking, with some Caribbean influence in spice and flavor. A small but noteworthy Chinese influence is rice. There is also some Italian influence. During colonial times, Cuba was an important port for trade and many Spaniards who lived there brought their culinary traditions with them. While the cubano sandwich has made it big stateside, there are a whole slew of other delicious Cuban dishes like torticas, ropa vieja, and comida criolla—that deserve your attention (and your appetite).
